It's BUFFALO.

I was getting ready to make a couple of buffalo burgers and offered one to somebody. "You want a buffalo burger?" I asked.

Of course they got all confused and then asked if I meant bison.

It's BUFFALO. Buffalo Bill got his name from killing BUFFALO. It's the same animal  people want to call bison. 

Of course the official naturalists are going to come along and say it's a Bison bison but so what? It's a buffalo. After all, why did the Indians go on buffalo hunts? They didn't go on bison hunts. They went on buffalo hunts.

Now do you want a damned buffalo burger or don't you?
